- Preheat Oven & Prepare Trays: Start by preheating your oven to 180°C (160°C fan/Gas Mark 4).1 Line two baking trays with baking parchment or silicone mats.
- Melt Butter, Sugar & Syrup: In a saucepan, gently melt the softened butter, light brown sugar, and golden syrup over a low heat. Stir until everything is combined and smooth. Be careful not to let it boil.Image of
- Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, self-raising flour, and bicarbonate of soda. Give it a good stir to ensure everything is evenly distributed.Image of
- Mix Wet and Dry: Pour the melted butter, sugar, and syrup mixture into the bowl with the dry ingredients. Mix everything together really well until you have a thick, sticky dough.Image of
- Form the Cookies: Take small amounts of the dough (about a tablespoon each) and roll them into balls. Place them on your prepared baking trays, leaving some space between each one as they will spread. Flatten them slightly with the back of a spoon.Image of
