Sometimes you just need a super-easy recipe to go with an easy dinner. Grab these four ingredients and make these easy muffins. They go great with just about any meal and we love them in the fall with soup or in the summer with a delicious garden salad.

SWAPS & ADDITIONS

This is a super versatile recipe; feel free to add any seasonings you like. If you’re not a huge fan of garlic, try using onion powder or Italian seasoning; these will be great with spaghetti. You can also switch up the cheese too.

These muffins are so easy to make, you only need 4 ingredients and you have a great addition to any meal.

  • 1 16-ounce can of refrigerated biscuits
  • butter around 1-2 tablespoons
  • 2 tablespoons of Roasted Herb Garlic seasoning we use McCormick
  • 1 cup of shredded Parmesan cheese
  • Preheat the oven to 375.

  • Spray a 12-cup muffin tin with non-stick spray. Cut each biscuit into four quarters. Place three pieces in each muffin tin.

  • This will make 10 muffins. Two pieces will be leftover, which can make a smaller 11th muffin.

  • Top each muffin with a small pat of butter and sprinkle with a little bit of seasoning and parmesan cheese. Distribute the seasoning and cheese equally amongst the muffins.

  • Bake for 15-18 minutes until brown on top and cooked through. Serve warm.

Step 1

Preheat oven to 425°. Mix together 4 garlic cloves, finely grated, 2 Tbsp. dried oregano, 1 tsp. sugar, ⅓ cup extra-virgin olive oil, and 1½ tsp. Diamond Crystal or 1 tsp. Morton kosher salt in a large bowl; season with freshly ground pepper. Add 1½ lb. skinless, boneless chicken thighs, cut into 2″ pieces, and stir to coat. Let sit 15 minutes.

Step 2

Meanwhile, spread out one 15.5-oz. can chickpeas, rinsed, on a rimmed baking sheet. Sprinkle 2 tsp. ground cumin and 2 tsp. smoked paprika over, drizzle with some oil, and season with salt. Toss chickpeas to coat.

Step 3

When ready to roast, add 3 Tbsp. fresh lemon juice to chicken mixture and toss to coat. Thread chicken onto skewers; arrange over chickpeas. Roast until chicken is opaque throughout, 6–8 minutes. Heat broiler. Broil until chicken and chickpeas are browned in spots, about 5 minutes. Remove baking sheet from oven; drizzle 1 Tbsp. extra-virgin olive oil over chicken and chickpeas.

Step 4

Combine ½ small red onion, thinly sliced, 1 lb. mixed tomatoes, cut into bite-size pieces, and ½ cup pitted Kalamata olives in a large bowl. Drizzle with oil and lemon juice, season with salt, and toss to coat.

Step 5

Scatter salad over chicken and chickpeas. Top with 6 oz. feta, thinly sliced, and parsley leaves with tender stems; serve with pitas and lemon wedges.

These Salted Nut Roll Bars are so easy to make and an absolute hit! Great addition to any gathering.

❤️WHY WE LOVE THIS RECIPE

We have always been big fans of the Payday Candy Bar, and this is pretty much the homemade version. We all agree it’s even better and that it’s only a few ingredients that make it an even bigger winner! You can make these in about 15 minutes and then just put them in the refrigerator to chill. We have made these for a few gatherings and so easy, just cut them in small pieces and enjoy!

SWAPS

We once made these with fat-free sweetened condensed milk, and they turned out good. You can also add in some Reese’s Pieces on the top if you like, or M&M’s. We like them made the original way but they are versatile. Some people use other nuts like pecans and switch up the peanut butter chips for butterscotch or chocolate, but if you want them to taste like payday, stick with this recipe.

These can be hard right out of the fridge, so we set them out for 5-10 minutes and then cut them. You can freeze them in an air-tight container up to a few months, just thaw and enjoy.

These salted nut roll bars taste just like a payday candy bar. Only a few ingredients and so easy to make! Graet for any occasion.

Cuisine American

  • 4 tablespoons butter
  • 1 10 ounce bag peanut butter chips (like chocolate chips but made of peanut butter)
  • 2 1/2 cups miniature marshmallows
  • 1 14 ounce can sweetened condensed milk (I used the fat free and it worked fine in this recipe)
  • 1 teaspoon vanilla extract
  • 1 16 ounce jar dry roasted and salted peanuts (divided)
  • In a pan on top of the stove melt the butter and chips together.  Add in marshmallows and milk and bring to a boil stirring constantly.  Turn heat down to a low boil and cook for 5 minutes stirring the entire time.  Remove from heat and stir in vanilla extract.

  • Spray a 9 x 9 baking dish with cooking spray and put half the peanuts in the bottom of the dish.  Pour melted ingredients over the peanuts and spread to cover.  Add the other half of the peanuts to the top and kind of mash into the cooked ingredients.  Refrigerate for at least a couple hours.

  • Remove and cut into squares or bars.  Makes 1 to 1 1/2 dozen pieces depending on size you cut them.
